Egg Salad with Avocado

*This is a great alternative to traditional egg salad mixed with mayonnaise.  Much healthier and in my opinion tastes much better too!



* 1 very ripe avocado

* 2 hard boiled eggs

* 1.5 tbsp of chopped red onion (you could also add in celery or any vegetable)

* sea salt

* pepper


Directions:  After eggs have been hard boiled chop up in small pieces.  Peel avocado and place in small mixing bowl with the eggs.  Mix up thoroughly until you reach the consistency of traditional egg salad.  Mix in onions, sea, salt and pepper to taste.  Eat as is, or serve on romaine lettuce leaves as a wrap, or on a mixed greens salad.  Delicious!
